Sushi Fried Rice

  • 350g of sushi rice

  • x1 pack of chicken thigh fillets

  • x3 tablespoons of gochujang

  • x3 tablespoons of soy sauce

  • x2 tablespoon of mirin

  • x4 tablespoon of oyster sauce

  • x2 teaspoon of sesame oil

  • x1 teaspoon of Chinese five spice

  • Vegetables of your choice - I used spinach, spring onion, sweetcorn

  • Cold cucumber to serve

  • Cold red pepper to serve

  • Toasted sesame seeds to serve

  • Spring onion to serve

Hướng dẫn

  1. Cook your sushi rice either according to packet instructions or your usual rice cooking method. (rinse x3, rice:water 1:1, lid on, bring to boil, reduce temp to lowest, timer for 12 mins, keep lid on and switch off the heat to steam for further 5 mins)

  2. Chop and fry off your chicken thighs, season with a teaspoon or two of Chinese five spice, garlic granules, onion granules and lots of salt and pepper.

  3. While this is cooking pull together your sauce so you can add some to the chicken. Combine and mix the gochujang, soy sauce, mirin, oyster sauce, sesame oil and a splash of water to loosen it up.

  4. Pour a tablespoon or so onto the chicken and mix, set aside.

  5. Fry off your vegetables in the same pan.

  6. Optional: Leave all ingredients to cool (particularly the rice) for 1hour.

  7. Add rice and chicken back to the pan on high heat if you let it cool, and low heat if you’ve just cooked it, and add in all the sauce and mix together to combine.

  8. Serve with sesame seeds, spring onion and cold cucumber or pepper.
