Moni's CON Fusion Ricotta Avocado Toast

1 Tbsp heaping of fresh ricotta
1 teaspoon lemon juice
1 large avocado
2 large eggs
2 slices of American cheese
Bacon as needed
2 garlic ciabatta
1 teaspoon everything bagel spice
Directions
Combine the lemon and avocado, then in a small bowl add ricotta and mix loosely. Set aside until ready to assemble the toast.
Cook bacon till desired doneness.
Toast the bread.
Coat a medium skillet with butter. Crack the two eggs into the skillet and cook for 2-4 minutes, add American cheese until the melted.
To assemble the toast place one slice of bread on each of two plates. Spread each slice with the ricotta-avocado mix, layer the bacon slices, then the egg with its melted cheese. Finish with a sprinkle of everything bagel spice.
Cover with slice of ciabatta bread and enjoy!
