Honey & Mustard Halloumi in Zucchini Blankets

8 oz (225 g) halloumi cheese, cut into 12 sticks
2 medium zucchini
2 tbsp olive oil
1 tbsp honey
1 tbsp Dijon mustard
1 tsp whole grain mustard (optional)
1 tsp lemon juice
1 tsp garlic powder
½ tsp smoked paprika
¼ tsp black pepper
Pinch of sea salt
1 tbsp fresh parsley, chopped (for garnish)
Sesame seeds (optional, for garnish)
Directions
Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
Using a vegetable peeler or mandoline, slice the zucchini into long, thin ribbons.
Pat the zucchini slices dry with paper towels to remove excess moisture.
Wrap one or two zucchini ribbons around each halloumi stick, overlapping slightly.
Arrange the wrapped halloumi pieces seam-side down on the prepared baking tray.
In a small bowl, whisk together the olive oil, honey, Dijon mustard, whole grain mustard, lemon juice, garlic powder, smoked paprika, black pepper, and a pinch of salt.
Brush the honey mustard glaze generously over each zucchini-wrapped halloumi piece.
Bake for 18–20 minutes, turning once halfway through.
For extra color, broil for 2–3 minutes until the halloumi is golden and the zucchini is lightly charred.
Garnish with chopped parsley and sesame seeds before serving.
