Creamy Nutritional Yeast Dressing

Ingredients

¾ cup (50 g) nutritional yeast

⅓ cup (80 ml) extra-virgin olive oil

¼ cup (60 ml) apple cider vinegar

¼ cup (60 ml) coconut aminos (optional)

¼ cup (60 ml) water (or ½ cup/120 ml if not using coconut aminos)

1 tablespoon sherry vinegar

3 garlic cloves, minced

1 teaspoon freshly cracked black pepper

I teaspoon kosher salt

Directions

Put all the ingredients into a food processor and whiz until completely blended and slightly creamy. Store in the refrigerator for up to 2 weeks.

Notes

If you already know and love nutritional yeast, you or your parents probably lived through the seventies... or you're vegan! Nutritional yeast has made a comeback in recent years, due to the rise of vegan cooking, in which cheese, anchovies, fish sauce, and other animal-based savory additives aren't welcome. Made from de-activated yeast (meaning you can't leaven anything with it), nutritional yeast looks like yellow flakes and tastes sort of cheesy, in a good way. I love the stuff; think of it as your secret umami-boosting ingredient.
