Steak Donburi

Ingredients (makes 4 servings):
For the marinated eggs:
1 tbsp rice vinegar
4 egg yolks
2 tbsp soy sauce
For the steak:
1 lb ribeye or sirloin steak
Salt & black pepper to taste
2 tbsp unsalted butter
2 cloves garlic, smashed
2 sprigs fresh thyme
For the sauce:
2 tbsp soy sauce
1 tbsp mirin
1 tbsp sake or rice vinegar
1 tsp sugar
Serve with:
2 cups cooked Japanese short-grain rice
Sliced scallion
Salmon roe (ikura), for topping
Directions
Marinate the yolks – Separate yolks from whites. Marinate yolks in soy sauce and rice vinegar for 30–60 minutes.
Cook the rice – Prepare short-grain rice and keep warm.
Sear the steak – Season with salt and pepper. Sear on high heat ~1–2 mins per side for rare to medium-rare. Add butter, garlic, and thyme, and baste until aromatic. Rest, then slice thin.
Make the sauce – In the same pan, mix soy sauce, mirin, sake (or vinegar), and sugar. Simmer briefly until slightly thickened.
Assemble the donburi – Start with rice, top with sliced steak, a marinated egg yolk, and drizzle with sauce.
Garnish & finish – Add sliced scallions and a spoonful of salmon roe. Serve hot and enjoy!
