1 ¼ cups milk (dairy or oat both work well)
3 T butter
¼ t ground pepper
1 cup + 1 T flour
5 eggs
~ 5 oz cheese or more (cheddar works well)
1 ¼ T cream or milk
Directions
Preheat oven to 325˚ F
Combine milk, butter, and pepper in heavy saucepan. Bring mixture to a boil, stirring now and then.
Remove from heat and add all the flour at once and stir well and it is quite smooth. Return to heat for a minute or two, stirring, until the mixture comes away from the sides of the pan.
Remove pan from heat again and stir in the eggs, one at a time, blending well each time. Blend until smooth. Add the cheese (except 2 T) and milk, and beat well.
Put into buttered dish (e.g., pie plate, glass casserole or something of similar size). Add remaining cheese on top and bake in 325˚oven for about 45 minutes to one hour. Do NOT open oven door for the first 35 minutes of cooking. Turn the oven temp up to 375 for the last 15 minutes to crisp up the top. Done when puffed and browned. It should be crispy on the outside.
