1 wheel blue cheese, 200g (7 oz)

1 sheet puff pastry, 320g (11 oz), thawed

1/2 cup walnuts, chopped, 60g (2 oz)

3 tbsp honey, 60ml (2 fl oz), plus extra for drizzling

1 tbsp fresh thyme leaves

1 tsp fresh rosemary, chopped

1 egg, beaten (for egg wash)

1/4 tsp cracked black pepper

Pinch of red chili flakes (optional)

Fresh rosemary sprig, for garnish

Directions

Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.

Roll out the puff pastry sheet and place the blue cheese wheel in the center.

Sprinkle half the chopped walnuts and thyme directly onto the cheese.

Wrap the pastry up and over the cheese, sealing the edges tightly, then flip so the seam side is down.

Brush the entire surface with beaten egg wash for a golden finish.

Bake for 20-25 minutes, until the pastry is deep golden brown and puffed.

Remove from oven and let rest for 5 minutes before topping.

Drizzle warm honey generously over the top, then scatter the remaining walnuts, cracked pepper, and chili flakes.

Garnish with a fresh rosemary sprig and serve immediately while the center is warm and gooey.
