Cashew Dressing

6 tablespoons (90 g) cashew butter
2 tablespoons soy sauce or tamari
2 tablespoons fresh lime juice
1½ tablespoons pure maple syrup
1 tablespoon minced fresh ginger
2 teaspoons toasted sesame oil
½ teaspoon kosher salt
1 Cup (80 ml) water
Directions
Put the cashew butter, soy sauce, lime juice, maple syrup, ginger, sesame oil, and salt into a food processor and process until smooth. With the motor running, drizzle in the water to make a creamy, emulsified sauce. Store in the fridge for up to 1 week, stirring before using if the dressing looks separated.
Notes
Smooth and creamy, with all the good flavors-nutty, sweet, salty, tangy-this sauce is an adaptation of the peanut sauce found in some Asian cuisines. Warning: It's addictive.
