Carrot Nut Breakfast Bars
Makes 10 - 12 bars

1½ cups raw cashews
1 cup pecans
1 cup rolled oats
1 cup banana, mashed
1 large carrot, peeled and grated
⅓ cup dates, pitted and chopped
1 tsp vanilla powder or extract
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
Directions
Preheat oven to 350°F Add all of the ingredients to a food processor and mix. The mixtur should stick together easily. Press the mixture into an 8- inch square baking dish. Bake for 15 minutes. Cool completely and cut into 10 - 12 bars.
