RECIPE below: this recipe is great for coeliacs, people wanting a high protein/keto/low calorie diet. It’s high in fibre and protein.
All you need is some ground chia (or flax seeds). You can blend them yourself if you have a high powered blender or you can buy them pre ground.
Ingredients - 5 egg whites and 3 tablespoons of ground chia seeds (pinch of salt to season)
Whisk your egg whites to stiff peaks, whisk in 3 tbsp of ground chia seeds carefully so you don’t loose too much air. Add a pinch of salt to season and prepare to bake.
I put this into 2 baguette moulds but you can also shape it into buns on some baking paper or a small loaf tin (for a regular loaf tin you will need to double the recipe). I got my baguette moulds from @lakelanduk but I’ll share the link on my bio and stories too.
I like to sprinkle some sesame/chia seeds on top but this is optional.

Bake in a preheated oven of 180C fan for 15-20 mins until golden. Remove and allow to cool before slicing.
