Smothered Chicken - Texas Roadhouse Style

2 boneless, skinless chicken breasts (about 1 lb total)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt & black pepper, to taste
2 tbsp olive oil
1 cup sliced mushrooms
1 cup chopped green bell pepper
1 cup chopped onion
1 cup shredded cheddar cheese
½ cup crumbled bacon (about 4 slices, or use turkey/chicken bacon for pork-free)
¼ cup fresh parsley, chopped (for garnish)

Preheat the oven to 375°F (190°C).
Season the chicken:
Sprinkle both sides of the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
Sear the chicken:
In a large oven-safe skillet, heat olive oil over medium-high heat.
Sear chicken breasts for 4-5 minutes per side, until golden brown. Remove and set aside.
Sauté the veggies:
In the same skillet, add mushrooms, bell pepper, and onion. Cook for 5-7 minutes, stirring occasionally, until softened and slightly golden.
Smother and bake:
Return chicken to the skillet, placing it on top of the sautéed vegetables.
Sprinkle cheddar cheese and crumbled bacon over each piece.
Transfer the skillet to the oven and bake for 20–25 minutes, or until chicken is fully cooked (internal temp: 165°F).
Rest and garnish:
Remove from oven, let rest for 5 minutes, and finish with chopped fresh parsley.
Tips & Swaps
Pork-free? Use turkey bacon or skip the bacon entirely and add a dash of smoked paprika or liquid smoke for flavor.
Cheese swap: Try Monterey Jack or mozzarella for a milder melt.
No oven-safe skillet? Transfer everything to a baking dish after searing.
