This Japanese restaurant style ginger dressing is incredibly delicious and very easy to make. We’re using a quarter of an apple for this recipe. I recommend peeling the apple first. The apple adds body and sweetness to the dressing. You can use whatever type of apple you like, but my personal favorite is the Fuji apple for its nice, bright sweetness. One shallot, peeled. You can also use a quarter of a red onion if that’s what you have on hand. Two pieces of garlic, peeled. The star of this recipe is fresh ginger, and using a medium piece, about 85 grams or so. Place those ingredients into a blender. Two tablespoons soy sauce. Quarter cup rice vinegar. One tablespoon cane sugar. A generous tablespoon of sesame paste. This will add a little nutty flavor and a nice rich texture. One cup of neutral flavored oil. In this case, I’m using avocado oil. Blend on medium high for a few seconds. This dressing is simple and incredibly addictive. It has a nice salty umami and a bright sweetness. The fresh ginger is quite prominent with a hint of sesame. It has a slight tanginess and some nice garlic flavor. I’m a simple guy, and my favorite way to enjoy this dressing is with some crisp iceberg lettuce, some fresh ripe tomatoes, some fresh and crunchy cucumbers, some thinly sliced shallots, and spoon over that delicious Japanese style ginger dressing. It’s savory, it’s sweet, and absolutely delicious. Try this ginger dressing with other veggies or as a marinade. As for storing the dressing, keep it in a bottle or an airtight container, refrigerated, and enjoy for up to one to two weeks. It may separate in the fridge, just give it a good shake before using.
