Greek Pita Bread

2 1/2 cups bread flour
2 cups all purpose flour
1 pack instant yeast
1 tsp sugar
1 tsp salt
1 1/3 cup warm water
2 tbsp Greek yogurt or any plain yogurt
1/3 of a cup olive oil
+ as much flour as needed for the counter and kneading
步骤
add into a bowl the flour, the sugar and the yeast and mix and fluffen the flour, then add the salt, the water, the yogurt and the olive oil
then mix with your hands until a sticky dough is formed
flour the counter about 2-3 handfuls and knead until the dough is not sticky anymore but still very soft and smooth
if even after the 3 handfuls of flour still feels sticky add more but very little at a time
drizzle some olive oil into the bowl, add the dough and drizzle again some olive oil over the dough
cover and let rise until double the size
flour the counter top and transfer the dough
make the minimum kneading to shape it and divide into 8-10 dough balls
flour the dough and with a rolling pin open the pita bread the size and the thickness you desire
drizzle some olive oil into a preheated skillet and add the pita bread
drizzle also some olive oil over the pita bread, you know is ready the one side when makes bubbles, then flip it over and cook 2-3 more mins or as needed
you can enjoy the pita bread with some olive oil, salt and oregano as an appetizer or side dish with spreads of your choice or stuffed with souvlaki and tzatziki
