I grew up in an Italian family, surrounded by Italian friends, in a super Italian neighborhood… and somehow no one mentioned this crispy chickpea magic?!

Now everyone’s like, “Oh yeah, panelle, of course!”

Umm… where was I?

Panelle🌱 (Italian Street Food)

1 ½ cups chickpea flour

3 cups water

1 teaspoon kosher salt

2 tablespoon chopped fresh parsley

1 tablespoon pizza seasoning

canola oil

TOPPINGS:

Lemon juice

Parmesan

Parsley

Grab a 10”x15 cookie sheet and cover it parchment paper and set aside

Add the chickpea flour, water and salt to a saucepan and whisk until combined. Hear the mixture over medium heat and whisk continuously for about 5-7 minutes. The mixture will be very thick at this point and clumped together. Remove the pan from the heat and add the parsley and pizza seasoning and stir to combine

Spoon the mixture onto the parchment lined cookie sheet and spread the mixture over evenly .

Place it in the refrigerator for at least an hour or until firm

Once it has set, cut it into 16 rectangles

Fry in batches for about 2-3 minutes per side or until golden brown. Drain on paper towels

Top with fresh lemon juice, Parmesan cheese and more parsley
