Who knew chicken nuggets could glow-up this hard with just a handful of ingredients? 🥥🍗

These Coconut Chicken Bites are golden on the outside, juicy inside, and so addictive you’ll wonder why you ever bought frozen nuggets again. Bonus: they take minutes to throw together and have a dipping sauce that will blow your mind! 🤯

RECIPE

For the Chicken

2 lbs dark chicken cutlets, cut into large cubes

1 container @goldentastesalads sweet onion dip

1 cup unsweetened coconut flakes

1 cup cornflake crumbs

For the Dipping Sauce:

1/4 cup soy sauce

2 tbsp. Mirin

2 tsp. Apple cider vinegar

1/3 cup sugar (or honey)

2 cubes @kosher_taste garlic, minced

2 cubes @kosher_taste frozen ginger

3 tsp sesame oil

1 tsp chili flakes or paste (optional for heat)

1 tsp cornstarch mixed with 2 tsp water (to thicken)

1/4 cup water

For the Chicken:

Coat your nugget pieces in the sweet onion dip well.

Mix together your unsweetened coconut flakes with your cornflakes crumbs

Dredge your chicken in the crumbs well on both sides.

Place onto a well sprayed wire rack that’s on a sheet pan.

Bake on convection 400F for 20 minutes

Or on 375F for 20-25 minutes

For the Sauce:

Add everything to a sauce pan and bring to a simmer for about 5-6 minutes till glossy.

Pour into dipping bowl.

For the Sweet Onion Dip - if you don’t have Goldentaste :

1 cup mayo

1 tbsp. Honey mustard

1/2 cup caramelized onions (can use the frozen cube ones)

1 tsp. Salt

1 tsp. Black pepper

1 tsp. Onion powder

1 tsp. Lemon juice

1 tsp. Sugar

Mix together and use as coating
