Garlic Herb Butter Roast Beef

1 ½ kg beef roast (sirloin, ribeye, or chuck)
4 tbsp butter, softened
5 cloves garlic, minced
1 tbsp olive oil
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
1 tsp paprika
Salt and black pepper to taste
1/2 cup beef broth (optional, for pan juices)

- Preheat oven to 220°C (425°F)
- Pat beef dry and season generously with salt, pepper, and paprika
- In a bowl mix butter, garlic, rosemary, and thyme
- Rub olive oil over beef, then spread garlic herb butter all over the roast
- Place beef on a rack or in a roasting pan
- Roast uncovered for 15 minutes to sear the outside
- Reduce oven to 180°C (350°F) and continue roasting 45–60 minutes until desired doneness
- Optional: add beef broth to pan halfway through for extra juices
- Rest roast 10–15 minutes, slice, and serve with pan juices
