Copycat sweetgreen Caramelized Steak Plate

Roasted Sweet Potatoes⁣

1 large sweet potato⁣

2 tsp olive oil⁣

1/4 cup nutritional yeast⁣

Spicy Broccoli⁣

1 1/2 cups broccoli florets⁣

1 tb olive oil⁣

1/4 tsp red pepper flakes⁣

2 tsp umami seasoning⁣

Pesto Vinaigrette⁣

1 cup basil, packed⁣

3/4 cup parsley, packed⁣

1/2 cup olive oil⁣

2 tb red wine vinegar⁣

1 tb dijon mustard⁣

3 cloves garlic⁣

1 tsp kosher salt⁣

2 cups cooked wild rice⁣

3/4 cup baby tomatoes, halved⁣

1/2 cup shaved parmesan cheese⁣

Steak ⁣

1 lb flank steak⁣

2 tsp garlic powder⁣

1 tsp kosher salt⁣

1 tsp pepper⁣

2 tsp avocado oil⁣

Preheat oven to 425F. Chop sweet potatoes into small pieces. Toss with olive oil and nutritional yeast. Roast in the oven for 25-28 minutes, shaking the pan half way through. Remove from oven once crispy and golden (adjust time as needed). Add broccoli florets to a bowl and toss with olive oil, red pepper flakes and umami seasoning. Transfer to a baking sheet and bake for 15 minutes. Next, prepare the wild rice and set aside. Make the pesto vinaigrette. Add all of the ingredients to a blender and blend until smooth. Finally, pat steak dry and season both sides with garlic powder, s&p. Heat a skillet over medium heat. Once the pan is very hot, add the oil, then add the steak. Let cook undisturbed for 4-5 minutes, then flip to the other side and let cook for 4-5 minutes more (for medium-rare). Let rest for 5 minutes then cut into bite-sized pieces. Finally, slice tomatoes and shred the parmesan cheese. Now build your bowls, with the wild rice on the bottom, then broccoli, potatoes, tomatoes, steak and parmesan. Top with pesto vinaigrette and ENJOY! #sweetgreen
