Orange & Poppyseed Yoghurt Loaf

2 cups plain flour

2 tsp baking powder

½ cup sugar

50g poppyseeds

1 tsp vanilla extract

1 lemon, zest & juice

¾ cup olive oil

1 cup Greek yoghurt

3 med eggs

Juice & zest of 1 med orange

¾ cup thick plain Greek yoghurt

Preheat oven to 175 degrees c. Line a loaf tin. Set aside.

Combine dry ingredients into a mixing bowl. Whisk together.

Combine wet ingredients in a separate bowl and whisk well until light and fluffy.

Sift dry ingredients into the wet and mix until just incorporated (be careful not to over-mix! Cake will turn out dense)

Gently scoop 1/2 the mixture into a smaller mixing bowl. Add in poppyseeds and mix until just combined.

Bake in oven for 40-50 minutes or until golden and a toothpick comes out clean when inserted into the centre. Set aside to cool.

Once slightly cool, remove from tin and pour over orange juice. In a small bowl combine 2 tbs sugar & 1/2 tbs orange zest and rub together with your fingertips.

To serve, slice and dollop with yoghurt, a little fresh orange juice and extra zest. Enjoy!
