Crispy Smash Dumplings

Sauce:▪️2 Tbsp Soy Sauce▪️2 Tbsp White Vinegar▪️1 Tbsp Sesame Oil▪️1/2 tsp Sesame Seeds▪️1 tsp Chili Garlic Sauce or Chili Oil (optional)▪️
Filling:▪️1 lb. 96/4 Ground Chicken▪️1 Clove Garlic, minced▪️3 Tbsp Fresh Ginger, minced▪️1 Cup Green Cabbage, finely chopped▪️3 Scallions, sliced▪️1 Egg▪️1/2 tsp Kosher Salt▪️1/2 tsp Pepper▪️1 Tbsp Sesame Oil▪️1 Tbsp Soy Sauce▪️1 Tbsp Cornstarch (mixed with 2 Tbsp water)▪️
For the Dumplings:▪️1 Pack Dumpling Skins (potsticker or wonton skins)▪️~4 Tbsp Avocado Oil, divided▪️1 Cup Finely Shredded Cabbage, for serving▪️Sliced Fresno Pepper, for serving (optional)▪️

Mix together the ingredients for the dumpling sauce and set aside
To make the filling, add the ground chicken, garlic, ginger, cabbage, scallions, egg, salt, pepper, sesame oil, and soy sauce to a bowl and mix; in a separate small bowl, mix the cornstarch with 2 Tbsp water and then pour it into the meat and mix again
Place 1 Tbsp filling in the middle of each dumpling skin
Preheat a large pan over medium heat and add 1 Tbsp oil (per batch); working in batches, place the dumplings meat side down on the pan, press down with a spatula to flatten the meat and cook 2-3 mins per side until golden brown and crisp; repeat, adding oil to the pan before each batch
Serve dumplings with shredded cabbage, a slice of Fresno chili (if using), and dumpling sauce drizzled on top; eat the smash dumplings like a taco and enjoy!
