Tofu Oat Pancakes

400g firm tofu

160g rolled oats

150ml plant-based milk

2 tbsp maple syrup

1 tsp baking powder

Pinch of salt

Add all ingredients to a high-speed blender powerful enough to process oats.

Blend on low speed until combined.

Increase to high speed and blend briefly until no large particles remain. The batter should be thick enough to hold on a spatula but fluid enough to spread slightly — like thick pancake batter, not thin crêpe batter.

Heat a non-stick pan over medium-high heat. Add a small amount of oil or butter of your choice.

Scoop the batter into the pan — about 60ml / ¼ cup per pancake — and gently shape into a circle.

Cook for 2 minutes until the surface looks dry and set, then flip. Cook for a further 1 minute until fully cooked through.

Repeat with remaining batter.

Serve with maple syrup, yoghurt and fresh fruit of your choice. Enjoy!
