Sweet Potato Gratin

28 cm loaf pan

Baking paper

1 teaspoon melted butter

4 medium sweet potatoes peeled thinly cut .

1/2 cup of milk

1/2 cup heavy cream

1/8 teaspoon fresh ground nutmeg

1 minced garlic clove

1 tablespoon of fresh thyme leaves

Salt & black pepper to taste

1/2 cup shredded Gruyere cheese

1/4 cup shredded Parmesan cheese

1 tablespoon finely shredded parmesan cheese

Butter the loaf pan

Arrange the sweet potatoes in an even layer, sprinkle gruyere and parmesan cheese on top. Repeat layering teh potato and cheese, till reaching 3/4 height of the loaf pan (press with hands the potatoes layers downwards)

In a bowl, combine milk, heavy cream, nutmeg, salt and pepper to taste, thyme and garlic. mix well.

Pour milk-cream mix on top of sweet potato layers.

Cover with baking paper.

Bake in a preheated oven to 200 Celsius degrees for ~45-50 minutes or until most of the liquids are absorbed. Remove the baking sheet. Continue to bake for 15 minutes or until gratin is golden brown and sweet potatoes are tender.

Remove from the oven, Garnish with thyme leaves and finely ground parmesan cheese. Serve warm.
