Sourdough Pretzel Bagels

Pretzel Bagel Dough

150 g starter

250 g warm water

30 g brown sugar

500 g bread flour

11 g salt

Pretzel Bath

1680 g water (7 cups)

75 g baking soda (1/3 cup)

Toppings

Pretzel salt

14g butter, melted (1 Tbsp)

步骤

Mix starter & warm water until bubbly

Mix in brown sugar

Add in flour & salt

Mix until all is incorporated

Poor dough onto the counter & knead well with your hands about 5 mins

Return to bowl, cover & leave on counter over night for 8-12 hrs until doubled in size

Divide into 6 & shape, placing on a parchment lined cookie sheet

Cover with a towel & let rest for 1 hour

Add baking soda to boiling water & boil for 2 mins, ladle water over the bagels

Sprinkle with pretzel salt

Bake at 425° for 25 mins

Brush melted butter over the tops and add more pretzel salt if desired

Let rest for at least 1 hr
