2 1/2 cups Gluten Free 1.1 flour or all purpose

1 3/4 cups sugar

6 egg whites

5 oz unsweetened yogurt or sour cream

1 cup coconut milk

3/4 cup butter, room temp

1 tsp coconut extract

1/2 tsp almond extract

1 1/2 tbsp baking powder

1/2 tsp baking soda

1 tsp kosher salt

1 1/2 cups sweetened coconut flakes

Coconut Frosting

1 1/2 cups butter, room temperature

5 cups powdered sugar

1 tsp coconut extract

1 tsp vanilla extract

8 oz cream cheese, room temp

1/8 cup milk

coconut for garnish

Preheat the oven to 350 degrees. Spray 2 8” round cake pans with nonstick baking spray and set aside.

Add the butter, extracts, and sugar to a bowl and mix on high until light and fluffy, approximately 3 minutes.

Add the egg whites, yogurt, and coconut milk. Mix until combined.

Add the remaining ingredients and mix until just combined. Do not over mix.

Divide the batter between the two cake pans.

Bake for 25-30 minutes or until the tops are golden brown and a toothpick comes out clean.Place on cooling racks. Allow to cool completely before frosting.

Toasted Coconut Frosting

Add all of the ingredients to a bowl and mix until smooth and creamy.

Frost the top of the cake and stack the second cake on top.
