This is the fifth and final part of my batched cocktail series, where I show you how to turn a classic cocktail into a crystal-clear version that’s perfect for hosting.
Clarified cocktails might sound intimidating, but this is one of the easiest clarified drinks you can make—because the Paper Plane is all equal parts.
Clarified Paper Plane – Batch Recipe
10 oz bourbon
10 oz Aperol
10 oz Amaro Nonino
10 oz fresh lemon juice
8 oz whole milk (about 20% of total volume)

Mix all cocktail ingredients together in a container.
Slowly pour the mixture over the milk (not the other way around).
Let it curdle and rest for at least a few hours—overnight is ideal.
Strain through a coffee filter, cheesecloth, or nut milk bag.
The first liquid will be cloudy—pour it back into the filter and continue until clear.
Once strained, you’ll have a clear, silky, batched Paper Plane with a smooth texture and balanced flavor—ready to pour over ice or serve straight from the fridge. If you want to add slightly more dilution you can stir this over ice for 10-15 seconds and serve.
