Watermelon, Feta, and Cilantro Salad

8 cups watermelon, cubed

1 cup feta cheese (crumbled or cubed, I used reduced fat)

1/2 cup red onion, thinly sliced

1/2 cup cilantro, chopped

2 tbsp. lime juice

2 tbsp olive oil

2 tbsp. red wine vinegar

Salt and pepper to taste

步骤

Make lime salad dressing.

Whisk together the lime juice, olive oil, red wine vinegar, salt, and pepper. Start with a small amount of salt since the feta is salty.

Toss all ingredients with dressing.

Toss together the watermelon, feta, red onion, cilantro, and dressing. Taste and season with salt and pepper if needed.
