Rhubarb & Macadamia Lowball

With its macadamia-fennel snack 🥜

步骤

Start with a rhubarb syrup, equal parts rhubarb slices & sugar, 2 pinches of salt. Let it do its thing for 24h. Strain.

Toast the macadamia nuts. Infuse half of them into calvados. 24h later, strain.

The snack

Take your leftover toasted macadamias.

Coat with egg white. Add a pinch of sugar, salt & fennel seeds.

Mix, mix.

Bake low until dry & crispy.

Do this with any nuts, any spices, any things.

The drink

10ml rhubarb syrup

5ml verjuice

15ml sweet vermouth (a bitter one)

45ml macadamia calvados

3 dashes Angostura

2 dashes vanilla tincture

Stir, pour over ice in a @service.projects Walter glass, garnish with a nice rhubarb shape.

Serve with macadamia-fennel snack.
