Chicken Pesto Pasta

Chicken thigh - skinless 1kg

Baby spinach - 120g

Pasta - fusilli or shells - 500g

Pesto sauce

Pine nuts

Making pasta

  • Add water to a pot. Add salt to water.

  • Bring to boil.

  • Add pasta and cook following instructions.

  • Once cooked, drain and cool the pasta with cold water.

  • Set aside.

Preparation

  • Cut chicken into bite sized pieces

  • Wash spinach

  • Prepare pesto sauce. If frozen, be sure to defrost first.

Cooking

  • Add oil to pan. Medium heat.

  • Add chicken to pan and fry until cooked. About 7-10 minutes.

  • Once cooked, remove any excess water from pan.

  • Add spinach, and cook until wilted. 1-3 minutes.

  • Change pan to low heat.

  • Add pesto sauce. Mix everything til coated.

  • Add pasta and mix. Allow to warm for 1-3 minutes.

  • Ready to serve.
