Cheez-It Crusted Chicken Nuggets

2 lb. boneless, skinless chicken breasts, cut into 1" pieces

Kosher salt

Freshly ground black pepper

1 large egg

3/4 c. buttermilk

1 tbsp. ranch seasoning

5 c. Cheez-Its, crushed

1 c. shredded cheddar

Ranch dressing, for serving

Arrange racks in upper and lower thirds of oven; preheat to 425°. Season chicken all over with salt and pepper.

In a large bowl, combine egg, buttermilk, and ranch seasoning. Add chicken and toss to coat.

In another large bowl, combine Cheez-Its and cheddar.

Working a couple pieces at a time, remove chicken from egg mixture, letting excess drip off. Add to Cheez-Its mixture and press to coat.

Divide chicken between 2 baking sheets, being sure not to overcrowd chicken.

Bake nuggets until an instant-read thermometer inserted into center of chicken registers 165°, about 12 minutes.

Transfer nuggets to a platter. Serve with ranch dressing alongside.
