Angel Custard Royale*

1 angel food cake

6 egg yolk beaten

1-1/2 cups sugar

3/4 cup lemon juice

1-1/2 teaspoons lemon peels

1 tablespoon gelatin

1/4 cup water

6 egg whites

Yellow food color

Whipped cream

步骤

Trim crust off cake; tear into 2" pieces

Combine yolks, 3/4 cup sugar, juice and peel

Cook over hot water til mixture coats spoon

Remove from heat

Add gelatin to water til softened

Add to lemon mixture and stir til dissolved

Chill until partially set

Beat egg whites; gradually add 3/4 cup sugar

Beat until stiff peaks form

Fold into gelatin mixture

Add a few drop of yellow food coloring

Arrange 1/3 of cake in bottom of 10" tube pan

Pour 1/3 custard over; repeat twice

Chill until firm

Invert on platter

Fill center with whipped cream
