Chicken in Creamy Parmesan Spinach and Mushroom Sauce

Ingredients:
4 boneless, skinless chicken breasts
2 tosp olive oil
1 cup mushrooms, sliced
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tosp Dijon mustard
Salt and pepper to taste
Fresh parsley for garnish

Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook for 5-7 minutes on each side until golden brown and cooked through. Remove and set aside. In the same skillet, add mushrooms and cook for 3-4 minutes until softened. Add garlic and cook for 1 more minute. Stir in fresh spinach and cook until wilted, about 2 minutes. Pour in the heavy cream, stirring to combine. Add Dijon mustard and Parmesan cheese. Let the sauce simmer for 3-4 minutes, until thickened. Return the chicken to the skillet, spooning the sauce over the top. Cook for another 2-3 minutes to warm the chicken. Garnish with fresh parsley and serve hot. Enjoy this creamy, savory dish!
