Key Lime Pie Trifle

Graham Cracker Layer

2 sleeves graham crackers (about 18 full crackers)

6 tbsp melted butter

2 tbsp brown sugar

1 tbsp vanilla extract

Pinch of salt

Lime Cheesecake Filling

2 (8 oz) blocks cream cheese, softened to room temp

1 cup powdered sugar

1 tbsp vanilla extract

1 can sweetened condensed milk

½ cup fresh key lime juice (or regular lime juice)

Zest of 2 limes

1oz box instant cheesecake pudding mix

1½ cups cold milk

Whipped Layer

2 cups heavy whipping cream

¼ cup powdered sugar

1 tbsp vanilla bean paste

Garnish

lime zest

thin lime slices/wedges

crushed graham crackers

Add graham crackers to a food processor and pulse into fine crumbs. Mix with melted butter, brown sugar, vanilla and a pinch of salt until fully combined.

In a large bowl, beat softened cream cheese until smooth. Add powdered sugar, vanilla and sweetened condensed milk and mix again until creamy. Fold in lime juice and lime zest.

In a separate bowl, whisk together cheesecake pudding mix and cold milk for 1-2 minutes until slightly thickened. Fold into the cream cheese mixture.

In another bowl, beat heavy cream, powdered sugar and vanilla bean paste until stiff peaks form. Fold HALF of the whipped cream into the lime filling and reserve the remaining whipped cream for the top layer.

In a deep glass dish or trifle dish, press down a thick layer of graham cracker crumbs, then top with a thick layer of key lime filling. Refrigerate for 20 minutes, then repeat the layers. Finish with the remaining whipped cream.

Cover and refrigerate for at least 5-6 hours, or overnight for best results.

Before serving, top with lime zest, lime slices and extra graham cracker crumbs. Enjoy!
