Sheet Pan Breakfast Burritos

1 red bell pepper

1 yellow bell pepper

1 yellow onion

400 g yellow potatoes (2-3)

16 oz 93% lean beef or turkey

Seasoning blend

650 g egg whites

3 eggs

200 g cottage cheese

8 g corn starch

50 g shredded cheese

10 burrito size tortillas

HIGH PROTEIN CREAM SAUCE

400 g fat free Greek yogurt

50 g hot sauce of choice

Garlic, salt, and pepper

Cut peppers, onion, and potatoes into cubes and spread on a large sheet pan with edges. Season with salt.

Roast at 450 for 30-40 minutes, or until softened and browned.

Pinch off pieces of the meat and spread an even layer over the veggies. Season with your Seasoning blend.

Bake for about 5 more minutes.

Whiz egg whites, eggs, cottage cheese, and cornstarch in a blender, and pour evenly once the whole sheet pan. Top with shredded cheese.

Bake at 450 for 20-30 minutes or until firm.

Meanwhile, make the cream sauce by mixing the yogurt, hot sauce, and garlic, salt, amd pepper to taste.

Cut the egg bake into 10 equal pieces (suggest 5×2).

To assemble, dollop cream sauce on tortillas, place egg bake pieces on top, roll up, and sear.

Store in the freezer. Reheat in the microwave for 3-4 minutes.
