Homemade Hob Nobs

These biscuits are one of the most popular in the UK and I certainly survived on them when I was at college with many, many cups of tea! Like the love child of a digestive and a flapjack, these oaty biscuits are easy to make at home and come together in jig time. Great on their own, or my personal favourite, spread with milk chocolate! Look for my reel on golden syrup if it’s not easy to find, perfect for this recipe!
150g instant oats*
50g plain flour
50g wholemeal flour
85g caster sugar
Half a tsp salt
1tsp bicarbonate soda
150g unsalted butter
2 generous tbsp golden syrup

Melt the butter and golden syrup together and pour over the dry ingredients, mixing till well combined.
Using a tbsp measuring spoon, place mixture on to a lined baking tray. I then use a glass to lightly flatten then using the open end, birl it around the mixture to make little circles.
I cook mine for 15 minutes at 180c fan and that yields a crispy edge and slightly chewy middle. If you like them crisp all through, bake at 160c fan for 20-25 minutes - keeping an eye on them. When they are still hot, lightly flatten then again birl the biscuits into a neat round shape using a glass or a cookie cutter. Leave to cool on a rack.
Spread with the chocolate of your choice or enjoy simply with a nice cup of tea.
if using rolled oats either blitz them to smaller flakes in a food processor or add an extra 50g of flour to the recipe.
