Butter Garlic Mushroom Fried Rice for Ep 12 of “15 in 15,” M

This one is stirred together with chef’s choice @leekumkee.india’s pantry staple soy sauces and sesame oil for a deeply-savoury one-pan dinner studded with umami-rich mushrooms. Serve it as is or with a fried egg on top and drizzle of hot sauce/ chilli oil for a meal in itself.

Melt 1-2 tbsp butter. Add 1.5 cups of sliced mushrooms, cooking until the mushrooms have released most of their water.

Once the mushrooms are almost completely cooked to a golden brown perfection, stir in 5-6 cloves of sliced garlic along with 1/2-1 tbsp more butter (optional).

Now stir in a handful of freshly diced spring onions + 1-2 green or red chillies diced (optional). You can even season with chilli flakes at this point.

Toss in your rice along with 1 tbsp dark soy sauce + 1/2 tbsp light soy sauce + 1 tsp sesame oil. Mix it together until well combined.

Serve hot with chilli oil/ hot sauce (I like to slide a fried egg on top too)… and DIVE IN!
