Pecan Cookies

1/2 cup butter

1/4 cup sugar

1 egg separated

1 tablespoon grated lemon peels

1 teaspoon lemon juice

1-1/4 cups sifted cake flour

3/4 cup finely chopped pecans

Heat oven to 325

Cream butter and sugar

Beat in egg yolk, then lemon rind and juice

Gradually stir in flour until blended

Chill dough

Form T of dough into ball

Beat egg white slightly

Dip balls in egg white then pecans

Bake until firm and brown, about 20 minutes
