Coconut Washboards*

1 teaspoon vanilla extract

4 cups flour

1-1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup coconut

Stir in water and vanilla

Sift together dry ingredients; stir in

Chill 2 hours

Roll into balls the size of walnuts

Bake on ungreased cookie sheet

Flatten with flour-dipped fork

Bake at 400 for 8-10 minutes

Makes 5 dozen
