Bacon, onion & potato bake

2 tbsp light creme fraiche

150ml chicken stock

4 garlic cloves, thinly sliced

2 tbsp chopped thyme

1.25kg potatoes, unpeeled, very thinly sliced

8 rashers lean back bacon, excess fat removed and chopped

2 onions, thinly sliced

250g Roblechon or Camembert, sliced

Hướng dẫn

1 Heat oven to 200C/180C fan/ gas 6. Mix together the créme fraiche and stock, stirring well. Scatter some ofthe garlic and thyme on the bottom of a large ovenproof dish that's big enough for all the ingredients. Add some seasoning, a layer ofpotato slices, some bacon, onions and cheese, then a little ofthe créme fraiche and stock mix. Continue layering to use up all the ingredients, seasoning each layer, and ending with a final layer of potatoes topped with cheese and thyme.

2 Cover with foil and cook for 1 hr, then increase oven to 220C/200C fan/gas 8 and cook, uncovered, for 30-40 mins more, until the potatoes are tender and the top is golden and bubbling. Remove and leave to stand for 10 mins before serving.
