Orange Cranberry Bread with Fresh Orange Glaze

Cranberry Bread

1 ½ cups all-purpose flour

1 tsp baking powder

¼ tsp salt

¼ cup milk, room temperature

¼ cup orange juice

6 Tbsp butter, softened

¾ cup granulated sugar

2 large eggs

1 ½ cups fresh cranberries

Orange Glaze

1 cup powdered sugar

1 ½ Tbsp orange juice (adjust for consistency)

1 tsp orange zest (OPTIONAL)

Preheat your oven to 350°F (175°C). Grease and line 9x5 loaf pan or 3 small loaf pans

Whisk together flour, baking powder, and salt in a medium bowl.

In another bowl, combine milk, and orange juice. Set aside.

Cream the butter and sugar together in a large bowl until light and fluffy (about 2–3 minutes). Add eggs one at a time.

Alternate adding the dry ingredients and wet mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Add fresh cranberries last and gently mix them into the batter as to not break them open.

Pour into prepared loaf pan and smooth the top.

Bake for 50–55 minutes if large loaf and 25 minutes if small loaves, or until a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Whisk glaze ingredients together until smooth and drizzle over cooled bread. Sprinkle extra zest on top if desired.

Tips

For extra flavor, brush the warm loaf with a bit of orange juice before glazing.
