1 cup (226 g) unsalted butter, softened
2 cups (400 g) granulated sugar
4 large eggs
3 cups (360 g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (240 ml) sour cream
Zest of 2 lemons
1/4 cup (60 ml) fresh lemon juice
1 teaspoon vanilla extract
For the Lemon Glaze:
1 cup (120 g) powdered sugar
2-3 tablespoons fresh lemon juice

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.
Cream the butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 3-5 minutes.
Add the eggs: Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
Mix in dry ingredients and sour cream: Gradually add the dry ingredient mixture to the butter and sugar mixture, alternating with the sour cream. Begin and end with the flour mixture. Mix until just combined.
Add lemon zest and juice: Gently fold in the lemon zest, lemon juice, and vanilla extract until evenly distributed throughout the batter.
Pour the batter into the pan: Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake: Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can tent it with aluminum foil.
Cool the cake: Once baked, remove the cake from the oven and let it cool in the pan for about 10-15 minutes. Then, transfer it to a wire rack to cool completely.
Prepare the glaze: In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Adjust the consistency by adding more lemon juice or powdered sugar as needed.
Drizzle the glaze: Once the cake is completely cool, drizzle the lemon glaze over the top, allowing it to drip down the sides.
