Steak Bruschetta

Baguette 24-30 slices

Olive oil

Garlic powder

1/2 - 3/4 lb Sirloin steak

Salt & Pepper

1 cup Mayonnaise

1 cup Blue cheese crumbles (approx 4 oz)

2 TBS White Wine Vinegar

1 tsp Dry mustard

1 1/2 cups Diced plum tomatoes, seeded

1/4 cup chopped fresh basil

2 TBS Olive oil

Preheat oven to 350

Brush baguette, sliced with olive oil, sprinkle with garlic powder and toast until golden (approximately 15 minutes).

Season steak with salt and pepper; heat a skillet over medium high heat. Sear steak for approximately four minutes on each side. Let rest 10 minutes and then slice into 1/4 inch cubes.

Mixed mayonnaise, blue cheese, vinegar, and mustard together. Set aside.

Combine tomatoes, basil, and 2 tablespoons olive oil. Mix diced cooked steak with tomato mixture. Seasoned to taste with salt and pepper.

Spread blue cheese mixture on toasted bread. Top with steak mixture.

Ghi chú

I like to sous vide the steak at 130° for three hours. Put bag in ice water to stop cooking when you take it out. Sear on a hot skillet for one minute per side.
