Low Cal High Protein Pumpkin Cream Cheese Muffins

Approx. Macros: 71 calories each | 6.3g protein | 8.7g carbs | 1.1g fat | and ONLY ~1.5g sugar!!

Ingredients (makes ~12 muffins):

Dry Ingredients:

1 cup oat flour (80g)

1 ½ scoops vanilla protein powder

1 tbsp pumpkin pie spice

1 tsp cinnamon

1 tsp baking powder

½ cup truvia brown sugar (or zero calorie sweetener of choice)

pinch of salt

Wet Ingredients:

1 cup pumpkin purée (240g)

¾ cup nonfat Greek yogurt (170g)

1 large egg

2 tbsp sugar-free maple syrup

Splash of vanilla extract

Cream Cheese Filling for all 12 muffins (I only used half in the video):

55g nonfat Greek yogurt

1 tbsp cheesecake-flavored Jell-O pudding mix (dry)

Optional: zero calorie sweetener to taste (I didn’t use any but this is just if you want yours sweeter)

Hướng dẫn

Preheat oven to 350°F (175°C).

In a large bowl, whisk together all dry ingredients.

Add in the wet ingredients and mix until smooth.

Spray a muffin tin with nonstick spray. Evenly distribute batter into 12 muffin cups.

Make a small well in the center of each muffin.

Mix the cream cheese filling ingredients until smooth, then pipe into each muffin well using a small baggie with the corner cut off.

Bake for 20–25 minutes, or until a toothpick inserted comes out clean.

Let cool before removing from the tin.
