1lb or 2 chicken breasts

3 minced garlic cloves

1 diced shallot

1/2c-3/4c chicken broth

1/3c heavy cream

1/3c chopped sun dried tomatoes

1/2c parmesan

1 sprig of Fresh oregano

1/4c fresh basil

1tsp tomato paste

handful of Spinach

1/2 tsp Red pepper flakes

Salt/pepper

Recipe:

season chicken with salt and pepper. Add to a pan w/ oil on med-high heat. Cook each side for 2 min until golden brown. Remove and set aside

add garlic and shallots, cook for 2-3 min until tender. Add tomato paste and stir. Pour broth and bring to a simmer 2min.

lower heat to med-low. Mix in the heavy cream, parmesan, sun dried tomatoes, basil, oregano, red pepper flakes, and salt/pepper to taste. Add a handful of spinach and stir.

put the chicken in the middle of the sauce and bake at 375F for 10min until the chicken is fully cooked (I did 15 min!!)
