Never buying baguettes from the store again. Period.
Bakery baguettes: $3-5 each
Homemade: $0.20 each (for the same quality)
Four ingredients. Bakery-quality crust. Soft, chewy center.
I learned to make these while living in Barcelona, where fresh baguettes were part of daily life. This recipe brings that same crispy-crust, soft-inside perfection to your kitchen.
Here’s how:
550g bread flour
2 tsp fine sea salt
385ml water (warm)
2 tsp active dry yeast
Hydrate yeast in 85ml warm water for 5 minutes.

Mix flour and salt. Add yeast water + remaining 300ml water. Stir into sticky dough. Rest 20 minutes.
Stretch and fold: Wet fingers, pull edges of dough up and fold into center. Rest 20 minutes. Repeat twice more.
Rise 1½ hours (or refrigerate up to 12 hours).
Divide into 3 pieces. Shape each into a 6×3” rectangle. Fold like a brochure, seal, roll into 15” baguette.
Place on parchment-lined baguette pan. Rise 1 hour.
Preheat oven to 475°F with pot of hot water on bottom rack (creates steam).
Score down center with sharp knife. Bake 15-20 minutes until golden.
You don’t need a fancy bakery when you can make better at home for pennies.
