Chocolate Chip Toffee Cookies

I hope you try my GIANT bakery style chocolate chip cookies with homemade toffee bits and loads of browned butter💛

Don’t let the homemade toffee scare you away—it’s wayyyyyy easier than it looks!! Or you can just omit it altogether with no issues😉

Toffee:

75g sugar

50g unsalted butter

40g corn syrup

45g cream

¼ tsp salt

¼ tsp vanilla

Cookies:

227g (1 cup) browned unsalted butter, cooled overnight

150g (¾ cup) light brown sugar

100g (½ cup) white sugar

1 tsp vanilla

2 large eggs

1 tsp cornstarch

1 tsp baking soda

1 tsp salt

340 g (2¾ cups) all-purpose flour (add gradually; stop when dough is no longer sticking to hands)

90 g (1 cup) oats

270 g (1½ cups) chocolate chips (I use a mix of dark, milk, semi-sweet)

Toffee: Heat sugar, butter, syrup, cream to 284°F. Stir in salt, vanilla. Pour on parchment, cool, chop, dust with flour.

Preheat oven to 410°F. Line 2 trays.

Cream browned butter + sugars until fluffy. Beat in eggs.

Mix in cornstarch, baking soda, salt, flour until nearly combined. Add chocolate, toffee, oats.

Weigh into 8 rough dough balls (4 per tray).

Bake 9–10 min, one tray at a time, until tops JUST start to color. Do not overbake!!!!!!

Sprinkle with coarse salt. Cool on tray 30 min before moving—cookies are extremely delicate warm!!
