Pa-dak (pan fried Chicken With Green Onions)

1lb chicken thigh
2 tbsp cooking wine (matsul)
Salt and pepper
5–6 green chili peppers, chopped (optional)
2–3 red chili peppers, chopped (optional)
4–5 garlic cloves, thinly sliced + 1 tbsp minced garlic (for sauce)
1 tbsp fish sauce
½ cup potato starch
About 4 tbsp water
3–4 green onions, thinly sliced
Oil for frying
Sauce:
2 tbsp soy sauce
2 tbsp cooking wine (matsul)
2 tbsp mulyeot (Korean corn syrup)
1 tbsp minced garlic
1 tbsp sugar

Marinate chicken:
Chop chicken, and marinate with 2 tbsp cooking wine, salt, and pepper for 30 minutes.
Make batter:
Mix chicken with chili peppers, sliced garlic, fish sauce, potato starch, and water.
Prep green onions:
Soak sliced green onions in ice water for 10 minutes, then drain.
Prepare sauce:
Combine soy sauce, cooking wine, mulyeot, minced garlic, and sugar.
Cook :
Heat oil in pan over medium heat. Spoon batter, spread slightly, and fry 4–5 minutes per side until golden and cooked.
Serve:
Layer the chicken, top with green onions, and drizzle sauce over.
