Elote Mac N Cheese

2 tbsp butter

1/2 onion, diced

1 jalapeño, diced

4 garlic cloves, minced

1 can of yellow corn

1 tsp salt

1/2 tsp black pepper

1 tsp paprika

2 cups heavy cream/coconut cream

3-4 cups of shredded mozzarella cheese

Box of pasta of choice

Garnish with paprika, tajin seasoning, cilantro and cotija cheese.

In a large pan on medium high heat, melt butter then add diced onion and jalapeño. Once slightly softened, add garlic and stir until fragrant. Pour corn along with seasonings. Cook, while mixing often until corn develops some color. Add in cream and once it begins to simmer lower the heat and slowly incorporate shredded cheese a handful at a time. Ensuring you wait for it to fully melt before adding more. Add in al dente pasta and mix until fully combined.
