Easy, Moroccan Couscous Recipe

1 tablespoon olive oil
1/4 cup chopped onion
1 garlic clove, minced
1/4 teaspoon cumin
1/8 teaspoon cinnamon
1.5 cups vegetable broth
3/4 cups couscous
1/4 teaspoon coarse salt
1/8 teaspoon pepper
2 tablespoons craisins
1/4 cup roasted, salted chopped pistachios
1/2 tablespoon chopped fresh parsley
Hướng dẫn
Heat a large saucepan to medium-high. Add olive oil, onion, garlic and spices. Sauté until the onions are translucent, stirring occasionally – about 5 minutes.
Add broth. Cover the pot and bring to a boil.
Remove from heat stir in couscous. Let sit for 10 minutes, or until the couscous has absorbed the broth.
Stir in craisins, pistachios, and parsley before serving.
