Beef & Quinoa "Taco" Skillet

The Base: 1 cup Quinoa (rinsed well), 2 cups Beef broth (certified gluten-free).

Protein: 1 lb Ground beef.

Vegetables: 1 bell pepper (finely diced), 1 cup frozen corn.

Seasoning: 1 tsp Cumin, 1 tsp Garlic powder, 1/2 tsp Onion powder (avoid "Taco Seasoning" packets as they often contain wheat flour).

Creaminess: 1 Avocado.

Hướng dẫn

Brown: In a large deep skillet, brown the beef with the diced peppers until the meat is cooked. Drain excess fat.

Simmer: Stir in the dry quinoa, spices, corn, and beef broth.

Cook: Bring to a boil, then turn heat to low, cover, and simmer for 15–20 minutes until the liquid is absorbed and quinoa is fluffy.

Serve: Top with lots of fresh avocado.

Why it works: The quinoa "sticks" to the beef, making it easier for a toddler to spoon up than loose rice.
