Pecan Pie

Pie crust

  • 1 1/4 cup flour

  • 1 tsbp sugar

  • 1/2 tsp salt

  • 6 tbsp butter

  • 1/4 cup shortening

  • 2 tbsp chilled vodka

  • 2 tbsp chilled water

Filling

  • 1 cup maple syrup

  • 1 cup (7oz) packed brown sugar

  • 1/2 cup heavy cream

  • 4 tbsp butter

  • 1/2 tsp salt

  • 6 egg yolks

  • 1 1/2 cup chopped pecans

  • 2 to 4 tbsp of bourbon

Pie dough

  • Make pie dough like all pie dough. Mix dry ingredients, add in the fats until crumbly, add in chilled liquid until comes together but not wet.

Filling

  • Preheat oven to 450F

  • Heat syrup, sugar, and cream until sugar dissolves. Cool 5 minutes.

  • Whisk butter, bourbon, and salt into sugar mixture. Whisk in egg yolks.

  • Place pecans in pie crust. Pour filling on top.

  • Lower oven to 325F. Bake 45-60 minutes until set on edges and middle is a little wiggly. Cool for 1 hour.
