Halloumi, Chorizo & Pesto Spaghetti

400g pasta- I used spaghetti

50g chorizo (sliced thinly)

140g light Halloumi (diced)

4 cloves garlic (finely grated)

2tbs tomato purée

2tbs Green or red pesto - I used reduced fat.

120ml @elmlea_ukie light single cream

Salt and pepper to taste

Pop your pasta into boiling water with a good amount of salt. Whilst this is cooking fry off your chorizo and halloumi until starting to go crispy and the oils have come out of the chorizo, then add in your garlic. Cook for a minute or so and then add in the tomato purée and pesto. Mix and add in the cooked pasta along with the cream. Mix well and then add a little pasta water until you get the perfect consistency, serve and enjoy.
